Our second fine-dining, multi-course dinner series with Trellis Dinner is sure to be as unforgettable as the first! For three nights, Ruby will host a limited number of guests for an extraordinary five-course tasting menu crafted and curated by Adam Ruplinger and Timothy Nishimoto from Trellis Dinners. Each dish will be skillfully paired with a mix of Ruby's pinots, chardonnay and dessert wine. More information coming soon!
Who is Trellis?
Sommelier Timothy Nishimoto and Chef Adam Ruplinger are long-time food and wine partners beginning at Timothy's former restaurant and wine bar, Coppia Wine Bar & Bistro in downtown Portland. When Timothy sold Coppia their bond continued through their mutual passion for pairing wine and food and creating unforgettable experiences for guests.
Trellis Dinners is the child of their passions, which show through each dinner they create. That is why we are so excited to have the opportunity to host Trellis at Ruby for three nights, February 14th - 16th to celebrate Valentine's Day and amazing food and wine. Space at each dinner is limited.
